Google Tasks on iOS

Adding/renaming/dropping lists is not yet supported. Please use Google's web site as a workaround.

In the next update you will be able to delete tasks one by one after pressing "Edit" in the List view, which should be a bit quicker that it is now. It's still not the same thing as deleting the whole list though, so this will come later.
